This culture will add a milder flavor to your Camembert/Brie). Can also be used to make Cheddar, Colby, Montery Jack, Blue cheese, Feta, Chevre and others. This gives a clean buttermilk flavor and forms a close texture with no holes/eyes. It makes a great base for blending with other single-strain cultures.
