Product Description

The mesophilic starter culture can be used to make homemade camembert, brie, blue cheese, mozzarella, chevre, feta, fromage blanc and other cheeses. 

Refer to Spec Sheet for usage rates.
  • (LL) Lactococcus lactis subsp. lactis
  • (LLC) Lactococcus lactis subsp. cremoris
  • (LLD) Lactococcus lactis subsp. lactis biovar diacetylactis
  • (freeze-dried direct set/DVI-Direct Vat Innoculation)

Use 1/8 tsp. per 1 gallon(3.7liters), 1/4 tsp. per 2-5 gallons(7.5-18.9 liters) 1/2 tsp. per 5-10 gallons(18.9-38 liters).

    This culture worked great and was very consistent in both of my very first times creating Chèvre. Brand new to cheese making.
    Also, appreciate the wonderful customer service. Had not planned well for the excess milk I was about to have, called and my order was sent right away 2 day delivery.

    To review the starters they are fine (so far I have only used one of them). What I really want to say is that your service has amazing delivery speed! I just ordered and bingo it was there on Monday! I live in a rural area on the north CA coast so I think you have secret elves who do magic delivery tricks!

    Have used it for Quark and Fromage Blanc using local Malagasy Cow milk, which can be variable, without issue. Excellent customer service, large packet size and price and free shipping is a real bonus. Thanks. LD

    Mesophilic starter MM100-101 I use to make cottage cheese and queso blanco and will be making much more as everyone has said how good it is.
