There are many gourmet home cheese makers from all over the world who enjoy creating cheeses. Paul from Lincoln, Illinois had excellent results with his first try at making Camembert/Brie cheese. Cheese making is a great hobby and will produce nice results if one follows the protocol for each particular cheese making recipe.
Steve, here's some pics of my first Camembert cheese, just before wrapping, and 6 weeks later. I followed your directions using skim milk and heavy cream. Creamy and very tasty! I am well pleased with my first effort. As I hone my cheesemaking skills, and have now found a source for fresh raw milk, I can just guess how much better future cheeses will be. They bread is home made using the whey instead of milk or water. If you want the simple recipe, let me know. I can hardly wait to taste my first blue cheeses!
