Especially made for home and small artisan cheese makers. Sturdy food grade stainless steel. Easy to use and clean. Makes nice evenly shaped size curds. Can be used to recut the curds to make them smaller, based on the cheese** you are making. Each individual section of the cutting blade is one square inch (25.4mm).
**Some cheeses like the Parma style require a very small curd size(grain of rice). By recutting the gel(soft curd mass) more than once, the curd size will be smaller. To properly use the our curd knife, grasp it by the blade(not the handle) to allow for firm support. Rinse with warm water immediately after use.

The amount of curds one can ladle into the hoop is based on the moisture content of the curd.
