You use only 1/2 teaspoon to make 1 Gallon of ready to use Star San Sanitizer.

Star San Acid Sanitizer is a  cold water surface sanitizer for your cheesemaking or other fermenting equipment. Use only 1/2 tsp.(2.4ml) in 1 gal.(3.75L) cold water and with only a 30 second contact time. It is odor free & tasteless. It is designed to use without rinsing. It may foam, and it is not necessary to rinse off the foam as this is counter productive. Detailed informational sheets included and also listed below.     No smell and fast drying. I clean the whole kitchen before making cheese and then wipe down the main surfaces right before making cheese. I also keep an open bottle of this mixture during cheese making so I can quickly sanitize hands/tools after washing in tap water. Makes me more confident that I have a clean environment to prepare my cheeses, especially the ones that will be aged! Note: no need to re-rinse after using this product. It is designed to use without rinsing or drying and will leave no odor, flavor in your cheese or on anything you sanitize with it. -Steve/thecheesemaker.com

    I have used several bottles of this sanitizer as well as several others. This is the most convenient and it does a great job. It is nice that it works in cool water, however I usually use it in hot water.
