NEW PRODUCT: CHR-Hansen 100% Dry Rennet Powder Sticks (sachets). These handy, convenient rennet powder sachets are individually packaged. Each sachet will clot 12 gallons (50 liters of milk). Use less for coagulating less milk. Each rennet stick is sealed in a foil sachet for easy use.
Available in 25, 50 or box of 100 sachets (sticks).
Hobbyist usage rate: one sachet will set 13 gal.(50 liters) of milk. For each gallon of milk, use approximately 1/12th of the sachet added to approximately 1/4 cup of cool clean water, wait for 5 minutes then add to your milk.

Hansen Sticks is a pure chymosin produced by submerged fermentation on a vegetable substrate. Contains a milk-clotting enzyme which is highly specific for kappa-casein, resulting in very good curd formation. The general activity also has a significant influence on the flavor and texture development of cheeses. The active milk-coagulating enzyme is chymosin.

The correct dosage of coagulants depends on the following factors: cheese type, temperature and pH of the cheese milk, characteristics of cultures and dosage of CaCl2 and NaCl. Factors may vary according to country, dairy and day. Therefore, exact dosage should be optimized to local conditions.
Directions for use:
It is recommended to dilute 1 part of coagulant in 10-50 parts of water prior to use. Dilution water must have a pH <6.4 and be free of chlorine. If pH and chlorine are not under control, we recommend a dilution of 1 part of coagulant in maximum 5-10 parts of water. The diluted coagulant should be added immediately to the milk while stirring for 2-3 minutes to distribute the coagulant properly.
