Making Kefir using a Dry Kefir Culture is easier and takes less time compared to using Fresh Kefir Grains. Great alternative if you don't have the time or inclination to cultivate Kefir Grains. The Dry Kefir Culture will make a smooth Kefir product, though it will be different than Kefir made using actual Kefir grains. Each packet will make up to 1/2 gallon on Kefir and you can use some of this Kefir make more by using a ratio of 9 parts milk to one part Kefir. Heat milk to 180f (82c) & hold for 2-5 minutes. Cool milk to 68-77f (20-25c) & add the contents to 1-2 liters(1/2 gal.) of milk. Stir well and hold at 72-74f for 16.-18 hours. Refrigerate. Store culture in freezer. Can be re-cultured. To make the culture go further, use 1/3-1/2 of one packet to 1-2 liters(1/2 gal.) of milk.
