About This Product

Geotrichum candidum is a mold which plays an important role in the ripening of Camembert and brie cheese.

Make your own Camembert and brie cheese at home. This mold powder creates the creamy texture of these soft cheeses and creates the creamy white texture on the rind. All of these strains are popular with subtle differences in aroma / flavor.

Strain 17 Mold like appearance: Very mild flavor and aroma             Available in a 10D packet
Strain 13 Mold like appearance: Intermediate flavor and aroma        Available in a 10D packet
Strain 15 Yeast like appearance: Mild flavor and aroma                    Available in a 2D packet

VEGAN STRAIN - If you want a VEGAN STRAIN for Vegan Cheeses such as a Cashew Camembert; use FLAV-ANTAGE Geotrichum Candidum

Home Cheese Making Usage:

  • Use 1/32nd-1/16th tsp.for 1-5 gal. of milk 
  • Available in 2 or 10 dose packets     A 2Dose Packet will make about 50 2-Gallon batches; a 10 Dose Packet approx 150 2-Gallon batches


To make Camembert or Brie,  you'll also need a Mesophilic Starter Culture and Penicillium Candidum.

    This is an excellent mold product. I made a lactic set bloomy goat cheese with ash and P. Candidum and it was truly excellent. Came out better than I could have hoped!
