Geotrichum candidum is a mold which plays an important role in the ripening of Camembert and brie cheese.
Make your own Camembert and brie cheese at home. This mold powder creates the creamy texture of these soft cheeses and creates the creamy white texture on the rind. All of these strains are popular with subtle differences in aroma / flavor.

Home Cheese Making Usage:
- Use 1/32nd-1/16th tsp.for 1-5 gal. of milk
- Available in 2 or 10 dose packets A 2Dose Packet will make about 50 2-Gallon batches; a 10 Dose Packet approx 150 2-Gallon batches
To make Camembert or Brie, you'll also need a Mesophilic Starter Culture and Penicillium Candidum.
