About This Product

Geotrichum candidum is a mold which plays an important role in the ripening of Camembert and brie cheese. Make your own Camembert and brie cheese at home. This mold powder creates the creamy texture of these soft cheeses and creates the creamy white texture on the rind. 

Strain 17 Mold like appearance: Very mild flavor and aroma
Strain 13 Mold like appearance: Intermediate flavor and aroma
Strain 15 Yeast like appearance: Mild flavor and aroma

(freeze-dried direct set/DVI-Direct Vat Inoculation)

A 10D packet will make approximately 300 Camembert/Brie cheeses. Use 1/32nd-1/16th tsp.(.14g-.07g) for 1-5 gal.(3.75liters-19 liters) of milk. You will also need to use Pen. Candidum and Rennet.

    This is an excellent mold product. I made a lactic set bloomy goat cheese with ash and P. Candidum and it was truly excellent. Came out better than I could have hoped!
