This yeast is DVI. It can be directed inoculated into the milk.

 Yeast for flavor and neutralization (de-acidification) in soft cheese; control of hole formation. 

This yeast is found in many traditional raw bloomy, smeared, and washed-rind cheeses.

It is a rapid de-acidifier with aromatic gas and small eye (hole) formation.
