Kombucha is fast becoming a very popular beverage that not only tastes great, but can be beneficial to your health.  Kombucha contains lot of Vitamin B and healthy bacteria and yeasts. I've had the commercial Kombucha of which there are many. Most just didn't wet my whistle. They had an odd aftertaste and were too acidic for my taste(you can adjust the acidity and flavor to your liking). After consuming some friend's(thanks Sacha) wonderful Kombucha I was hooked. Kombucha is very easy to make. You can carbonate it naturally or artificially(I run two on tap at home).  Add non-sweetened fruit juice after to give it the flavor you want.  Or use herbal teas from Rishi to add great flavor. ABOUT OUR SCOBYs: SCOBYs are freshly cultured weekly with no additives or preservative. They're produced only using only fresh filtered water, Rishi Organic Tea and organic cane sugar. Our SCOBYs include plenty of culture and the tea they were produced in. This insures a very strong and vigorous start to your Kombucha making. They are packaged in sealed food grade plastic vacuum packets.
If your first batch is a gallon size jar, your Kombucha should be completed in 7-10 days, depending on ambient room temperature.

Note: Your first batch may take more days to fully ferment due to the SCOBY's temporary dormancy during travel, so be patient. The SCOBY will grow to the width of the jar(at the liquid surface) and the next batch will ferment in the actual 7-10 days. 

Directions: Bring 1/2 gallon(1.89l) of water and 1 cup(236.5ml) white* sugar to boil, turn off heat, stir in tea, steep for 10-15 minutes. you can place the SCOBY along with all the liquid that came with your SCOBY into the jar. SCOBY's do not like too warm or hot tea. The temperature should be between 65-75F(18-24c). Strain off the tea, then add 25% ice and fill with cold water to get your 65-75F(18-24c) temperature.  Use glass jar, cover with cloth using rubber band to secure cloth. Allow to ferment at room temperature*** for 7-10 days, sometimes longer with first batch. Using a clean spoon, taste your Kombucha for residual sweetness. Ferment until you prefer the acidity level (usually 7 days, though sooner once your SCOBY matures and thickens). Pull SCOBY off Kombucha and store SCOBY in a glass jar covered with either freshly made cooled tea/sugar/water or a small amount of already fermented Kombucha. Store your SCOBY at normal room temperature, adding(about every 3-4 weeks) a small amount of freshly made tea/sugar/water to maintain health of SCOBY.  Color of SCOBY may look brown on top with strings hanging underneath. This is normal. Discard SCOBY if white or black colonies of mold appear. You don't want your Kombucha to become too acidic. Seven days seems to be the magic time period for fermentation yet as your SCOBY matures, it can ferment a gallon of Kombucha in 3-5 days. Add non-sweetened fruit juice after fermentation is complete to give it the flavor you want a fruit flavor.  Or use herbal teas from Rishi to add great flavor. Kombucha is gluten free. Store your Kombucha in a glass bottle with secure lid if you want it to produce some carbonation. Use a funnel and screen(included with Kit) or clean sanitized to strain your finished Kombucha for bottling. There is still Kombucha bacteria in the liquid and you may see a new SCOBY baby forming at the top. Upon drinking your Kombucha from a bottle, you may or may not want to discard the little SCOBY baby, though some like to swallow it, since it contains healthy bacteria and yeast.

Sugar to water ratio: 1 cup(236.5ml)  of white sugar to 1 gallon(3.78l)  of water.

Leaf to water ratio: Kombucha tea: 5 tsp.(24.6ml) for one gallon(3.78l) of water. Steep Time:10-15 minutes.
Leaf to water ratio: drinking tea: 1 tsp.(5ml) per 8 oz.(236.5ml) Steep Time: 3 minutes (1st infusion), 4 minutes (2nd infusion).

    This was so much easier getting started making my own Kombucha than my last attempts on my own - The SCOBY is super healthy and the other parts of the kit make life really easy! I have made four successful batches in a months time and love experimenting with new flavors - I also appreciate the pH strips! Great way to get powered up!

    Having the kit with everything you need to start made it easy to try my first attempt at making Kombucha. Steve was always available to guide me when I had questions and was so patient. Today I will harvest my first batch and start my second.

    I took Steve's class at the beginning of this month and am SO glad I did. The class was fun and informative, the kit is amazing and Steve is so helpful. I think I contacted him at least 3 times with concerns during my first home brew. Each time he responded quickly, offered reassurance and gave additional information. My SCOBY is thriving! My family took to the kombucha right away! They love it so much that I am now working on a continuous brew along with a weekly brew! So thankful to Steve for all the help and introducing us to this delicious beverage!!

    Awesome Kombucha kit

    I tasted my first Kombucha this summer and loved the refreshing taste. I started drinking it again this winter, hoping it would improve my immunities. After drinking Kombucha, I feel somehow more energized and can instantly breathe better. A little web research uncovered, that I could brew this costly store bought elixir myself for a fraction of the $5 cost. I received my first mother and recipe from Steve about a month ago and I was immediately hooked. It is so easy to make!!! I am already on batch 3 and love it. I’m experimenting with a combination of batch and continuous brew techniques. Steve’s mother was so powerful that it created its own baby in about two weeks, which I’m using now in my batch method. Steve is very attentive to my questions and gets back to me very quickly. The whole process is much easier than I thought. Saturday morning has become my Kombucha making days. My husband loves the taste and mixes it with orange juice for a non-alcoholic Kombucha mimosa. I love it plain, because the Rishi tea that I also received from Steve is so wonderful in flavor; my Kombucha is great on its own. I look forward to making Kombucha smoothies this summer.
