Geotrichum Candidum

Geotrichum candidum is a mold which plays an important role in the ripening of Camembert and brie cheese. Make your own Camembert and brie cheese at home. This mold powder creates the creamy texture of these soft cheeses and creates the creamy white texture on the rind. 

Used in conjunction with a Mesophilic Starter culture and Penicillium Candidum.
