The SCOBY

Your SCOBY is the part of brewing that transforms your tea and sugar into delicious kombucha. It is the disc-like culture mass that keeps the bacteria and yeast alive that ferments the tea. The SCOBY also seals off the fermentation from the air and undesirable bacteria. Your scoby is essentially the live in chef for your Kombucha home brewing process. Just add your tea and sugar, wait, and it’ll do the rest.

Continuing your Kombucha Brewing with your SCOBY

Your SCOBY willconstantly add a new layer on its surface each time you brew a batch of kombucha. This is what allows you to do continuous batch brewing for the long term. Even if you suffer a set back with your mature SCOBY, you can take some of your old kombucha and add it to some more tea and sugar to start growing a new one. It’s this cycling process that makes using a kombucha starter kit such an amazing way to get into Kombucha making at home.
