FLORA DANICA MESOPHILIC STARTER CULTURE  50D Packet

A versatile starter known for making softer cheeses as well as butter and cream cheese; you can also use for  goat milk cheeses, lactic cheeses, Chevre, Gouda, Leerdam, blue cheese, Samsoe, Havarti and Edam 

Flora Danica creates the delicious buttery flavor while acidifying the milk for delicious tasting cheeses. 

1 Packet  (50 dose) will inoculate approximately 130 gallons of milk.

Composition: 

  • (LMC) Leuconostoc mesenteroides subsp. cremoris
  • (LLC) Lactococcus lactis subsp. cremoris
  • (LL) Lactococcus lactis subsp. lactis
  • (LLD) Lactococcus lactis subsp. lactis biovar diacetylactis
  • contains lactose

Usage:.

  • Per 1 gallon (3.7 liters) use 1/8 tsp
  • Per 2-5 gallons (7.5-18.9 liters) use ¼ tsp
  • Per 5-10 gallons (18.9-38 liters) use ½ tsp

    My favorite flavor for sour cream, butter; all northern European washed-curd cheeses like Havarti, Gouda, Danbo, Raclette; buttermilk, & cottage cheese. The clumpy textured crumbles insure a good mix in each pellet, of the 4 major cultures in Flora Danica.

    Excellent culture used for chevre, cottage cheese, buttermilk. We'll probably end up using it for other cheeses when the cow freshens but using it in goat milk currently.

    I made soft cheese with this and it tasted great. I also brined it and used with peppers, and smoked it with wood. Great success.

    Works, but...

    I used this Flora Danica to make sour cream, and I got a good result. But the flavor was not as "sour" as I would have liked. Combined with Mesophile Aroma B, I got the best sour cream. I am working with raw cow's milk cream. Note from Steve/thecheesemaker: Flora Danica is a bit milder with its proprietary blend of lactic bacteria. Some have fermented at an increased temp to add more acidity.

    I was pleasantly shocked at the difference between this and other typical mesophilic cultures in making chevre. The texture of my cheese has been delightfully smooth, creamy, and just as the description promised, CREAMY! I love this culture!!

    I adore Flora Danica! Although it costs a bit more, I always use it for my chevre, because it produces the most lovely, flowery cheese. My first batch from this order was simply delicious.
