About This Product

LyoPro ALPINE  is a Mesophilic Starter culture blended with a Thermophilic culture;  use for Hard and Very Hard cheeses!

And with the addition of Lactococcus lactis biovar diacetylactis;  small eyes will be formed in the finished products.

Hobbyist usage rate: use approximately 1/8 tsp. for 1-3 gal.(3.78l-19l) of substrate.  50 dose packet will innoculate 126 gallons Milk.

Description: A blend of homofermentative and heterofermentative cultures that shows good fermentation performance, aromatic abilities and medium proteolytic activity.

Due to the addition of Lactococcus lactis biovar. diacetylactis small eyes are formulated in the finished products.
