    Coagulant tablet

Posted by Rosa on 12th May 2020

It work great, and taste great too. The only thing is that after 2 weeks the cheese got a bitter taste. Note from Steve/TheCheeseMaker: bitterness can arise from lipase in raw milk. Microbial coagulants are best for fresh cheeses or cheeses that don't need long aging, though some longer aged cheese do well when this type of coagulant is used. I recommend using a 100% Chymosin or Veal rennet for cheeses that need to be aged longer than a month.

    rennet tablets

Posted by Harry Munson on 13th Dec 2019

I used 1 tablet for 1 gallon on raw milk. It worked real good. Is that too much?. We were making OSTA-Kakka. Note from Steve, The correct usage rate is one tablet for 12-13 gallons of milk, but you can use a small amount more if the milk is pasteurized and or homogenized.
