MY 800 Thermophilic Starter Culture 

MY 800 is a thermophilic culture blend used in specialty fermented milks, soft cheeses, semi-hard cheeses, and Reblochon-type cheeses.

This blend offers quick acidification to pH 4.70-4.60 and then, a slower acidification to reach lower pH. This characteristic allows a good pH control for a constant optimized quality product.

Streptococcus thermophilus
Lactobacillus delbrueckii subsp. lactis
Lactobacillus delbrueckii subsp. bulgaricus

USED TO MAKE: Traditional starter for Reblochon cheeses; also great for butter, soft cheese, cottage cheese

USAGE RATE: Specialty soft cheese, semi-hard cheese, Reblochon-types: 5-8 DCU per 100 liters milk; Fermented milk: 20 DCU per 100 liters milk


Hobbyist Usage

Use 1/8 tsp. per 1 gallon(3.7liters), 1/4 tsp. per 2-5 gallons(7.5-18.9 liters) 1/2 tsp. per 5-10 gallons(18.9-38 liters).
