This Kosher Non-Iodized commercial salt is the same salt used by many of Wisconsin's cheesemakers. It is a semi-course salt, excellent for cheese making. This salt makes and excellent brine for brining your hard cheeses like Gouda, Parmesan and Emmental. Click here to view the Brine Calculator. This calulator will help you decide how much salt to use for your specific type of cheese. Using a Salinometer/Salometer to accurately measure the salt concentration in your brine is important.
