About This Product

Geotrichum candidum is a mold which plays an important role in the ripening of Camembert and brie cheese.

 This is a large 10D packet (make approx 100 2-Gallon Batches)

 contains milk / lactose

Make your own Camembert and brie cheese at home.

This mold powder creates the creamy texture of these soft cheeses and creates the creamy white texture on the rind. A

USAGE RATE: Usage varies somewhat depending on application:

Inoculation directly into milk -- 1-2 doses per 1000 liters milk (2200 lbs.)    and/or

spray-on (direct surface application) -- 2 doses rehydrated in buffered water per 1000 liters milk (2200 lbs.)

 

Home Cheese Making Usage:

  • Use 1/32nd-1/16th tsp.for 1-5 gal. of milk 

 

To make Camembert or Brie,  you'll also need a Mesophilic Starter Culture and Penicillium Candidum.
