Kadova brand cheese moulds eliminate the need to use cheese cloth. These moulds are prized by professional cheese makers who want a uniform cheese with curved sides. Made of very heavy duty food grade plastic. There are four parts to these moulds; mould, mould screen(liner), lid and lid screen(liner). When cleaning the screen(liner) temperature should not exceed 131f (55c).

After a lot of effort to work out my Gouda and Fontinella recipes, the final touch just had to be the traditional shape. I have tried other cove corner moulds, with generally unsuitable results. This heavy duty item is well executed in every way and will produce a perfect Gouda profile with one little trick. At the end of the press cycle, flip the cheese, warm the mold and nets in hot tap water,and apply a light weight to the follower. I use an 8 lb brick for the large mould for ten minutes or so. This will even out the follower seam, and form the band around the circumference evenly. This mould fits a 4 gallon recipe just perfectly for both of the above mentioned styles.
