Stretching hot Mozzarella curd without gloves was always unpleasant for me.
After testing various gloves, I found these to be adequate for handling hot curd, but not suitable for long term total immersion.
I have tested these gloves to the following temperature range.
Your own comfort level may be lower or higher.
- 160f(71c); very comfortable
- 170f(76.6c); slightly uncomfortable/10 second immersion limit
- 180f(82c);slightly uncomfortable, 5-10 second immersion limit
- 190f(87.7c): uncomfortable, 3-4 second immersion limit
- 200f(93.3c): very uncomfortable, 2-3 second immersion limit.

Had been looking for silicone gloves to handle curds coming out of 170 degree brine and came across these. They worked great. Able to work my curds better without killing my hands. Good dexterity. My best mozzarella has turned at so far as a result!

Having been a pastry chef, I used to handle temps of 308 degrees F of hot sugar without gloves. The temps for cheese are much lower, but no reason to subject your hands to hot conditions. You will get the same results and will not earn any extra brownie points by not using them. Just a suggestion, order a size larger than your hands. This way, you have the option of wearing another thin pair underneath.
