About This Product

This gas producing culture produces CO2 and diacetyl (butter flavor) in cheese.. It will enhance your Blue cheese and Gouda along with MM Series. This is especially beneficial in soft or moist blue cheeses where holes "eyes" make a more stable air supplier to the blue than a needle piercing.

  • (LMC) Leuconostoc mesenteroides subsp. mesenteroides

Usage rate: Hard Blue cheese/5-10 DCU per 1000 liters milk.  Soft blue cheese/1-3 doses per 264 gallons(1000 liters) of milk.

Kosher Certified.  Vegan Use Disclaimer: This product is produced using lactose as a fermentation nutrient. This means that during the fermentation part of the production process, any lactose is fermented out and is NOT present in the final product. If you’re a commercial vegan cheese producer, this may still not meet your quality control. For home vegan cheese makers, this product has no lactose in it and is technically considered vegan.
