This culture is a blend of Thermophilic bacteria for making Parmesan, & Emmental/Swiss. This culture has a very high heat resistance. Each packet will make many many batches of cheese. 

(ST) Streptococcus thermophilus
(LB) Lactobacillus delbrueckii subsp. lactis
(LH) Lactobacillus helveticus

(freeze-dried direct set/DVI-Direct Vat Inoculation)

Use approximately 1/8 tsp.(.46g) for 1-10 gal.(3.7-37 liters) of milk.
