A few tips: Press the curds in the mould or press hoop for an hour or until the cheese can be taken from the mould/hoop without falling apart. Then, dress with cheese cloth. I like to cut the cloth in a circular shape to fit slightly over the top and bottom of any round cheese mould or hoop. This method eliminates creases in your cheese.
After using, clean the cloth in warm water, then sanitize in cold water using Star San non-rinse sanitizer.
