    I used these to dry some cheeses on top of and am now using them to age cheese on top of; works great for both applications. Note that if you are making a soft cheese expect to have the pattern from the mat imprinted on to your cheese. Personally I think it looks cool.

    flexible and the spaces between the lines are large enough to let whey easily drain while still holding the shape of the cheese.
