theMilkman®  JCG  (Jack-Colby- Gouda) Starter Culture  50 CXU Bulk Pack

Easy to use - makes outstanding 'washed curd' cheeses including

Monterey Jack, Pepper Jack, Colby and Aged Gouda

 Use with 130 gallons of milk

 Mesophilic / Thermophilic blended culture

(note- to make any of these cheeses, you'll need a CHEESE PRESS; as pressing is part of the process!)

 

 

for Smaller Batches: 

Easy to use; just use 1/8 tsp per 2 gallon batch ; follow our recipe or 1/4 tsp for 3-5 gallons.

 

 NOTE: Culture does not include RENNET;  order Rennet separately if needed (RENNET)

We recommend Veal Rennet or Chymosin for aged cheeses.

Composition:

Lactococcus lactis subsp. lactis,
Streptococcus salivarius subsp. thermophilus,
Lactococcus lactis subsp. cremoris,  

Application: Aged Wash Curd Cheeses - hard  to semi-hard cheeses:  Aged Gouda, Pepperjack,  Monterrey Jack, Colby and Munster.
