Kefir is a fermented and cultured beverage. As far as taste goes, it tastes a lot like a yogurt drink.

OUR GRAINS ARE RAISED ON LOCAL PASTEURIZED COW MILK.

What makes Kefir so great to have on hand is that it is nutrient dense. It has plenty of B vitamins, potassium, calcium and protein.

Not to mention, like yogurt, the probiotics are important. They help improve the healthy bacteria ratio in your gastrointestinal tract.

While you can use dairy milk to produce Kefir, you can also choose non-dairy options like coconut milk which makes a lovely smooth Kefir.

 

When you have Kefir grains, expect them to reproduce and produce more grains.

 

TEMPERATURE:  Room temp (70-85F) is ideal.  In order to maintain a warm temperature in your Kefir vessel, you might consider a fermentation heater belt to warm the environment.

These belts will help keep your Kefir grains warm, especially when the colder months arrive.

 

STRAINING: Use the proper strainer to collect all the Kefir grains, especially the baby grains which can fall through some strainers.

Our fine mesh strainers  provide the ideal mesh to allow kefir  to flow through but contain even baby grains.

NOTES:

  • The grains we harvest and sell are EXACTLY the big fluffy grains you see on our website.
  • ALLERGENS;  CONTAINS MILK / LACTOSE from Cow Milk

 

  • Before shipping the grains we Fresh Freeze them, as this allows them to travel safely for several days
    • When we freeze them the grains are both protected but also stressed when they are revived- follow the revival instructions.
    • The grains exude liquid when frozen, shrinking in size.
    • We ship our grains USPS Priority Mail, fresh frozen and in a thermal envelope. They will thaw during transit; that's not an issue. 
    • Once revived (as per instructions) the grains will grow, thrive and multiply as well.
    • You’ll have big fluffy grains after a few weeks of nurturing and feeding them properly.
  • The grains you receive will make fantastic Kefir!

    From experience I can say that The Cheesemaker sells the highest quality kefir grains (in terms of flavor, viability, even quantity and shipping practice. I bought from their main competitor once and was very disappointed. But THESE grains will not disappoint. The milk kefir I make with them is far superior and much more "alive" than any store-bought kefir.

    This is my first time trying to make Kefir so it seemed a bit overwhelming to me. I had to revive the grains and then was ready to start making kefir. Steve Shapson was so very kind to me and answered questions I had. Now I make a quart a week. So awesome!

    Bought kefir grains from another cheesemaking supplier, and had no luck making cheese or getting the grains to multiply. Bought these kefir grains, received 5 times the quantity I got from the other source, and these are not freeze-dried. They're growing like crazy, and act a lot different. Looking forward to seeing what cheeses taste like with real kefir grains. There is a learning curve for a complete newbie like me, but The Cheesemaker provided excellent support and suggestions to help me understand how to care for my new kefir grains. THANKS SO MUCH!

    I have not had ANY success getting the grains to produce the taste of the kefir. Only cottage cheese texture and smell :( I placed them in a cup of milk in the fridge out of desperation. But any suggestion to revive them is welcome. Note from Steve/TheCheeseMaker: Once fresh Kefir grains are revived from their transit time, best to get them in a little milk and go through the reviving period of about 3-4 days. Your issue is a matter of over-fermentation. Refer back to our instructions which will help. Best to monitor the ferment and when the top layers are creamy and thick, strain off that wonderful Kefir and place in fridge. It will continue to ferment so only make enough to consumer within a week or less.

    I got my first batch almost year ago. Had trouble getting it to grow. Had a backup batch that my wife threw out because she has dimentia and is now in a nursing home.
